À l'occasion de nos escapades vigneronnes en Pays d'Aix - Sud Luberon, nous avons rencontré le Chef Nicolas Chouchanian, dans sa cuisine au restaurant Le Mas de Fauchon.

Quelle est votre approche du terroir local ?

"Dans chacun de nos plats il y a un produit local qui vit, des hommes dont le travail est respecté, des animaux élevés dans de bonnes conditions, en favorisant le circuit court, on valorise un agriculteur local. Cette approche est de plus en plus demandée par nos clients."
