Le Moulin de Coudoux

Halfway between Aix-en-Provence and Salon-de-Provence, the Moulin de Coudoux (Cooperative Oléicole) is the last entirely traditional mill in the Bouches-du-Rhône, and one of the last in France.
Midway between Aix-en-Provence and Salon-de-Provence, the Moulin de Coudoux olive-producing cooperative is the last completely traditional olive mill in the Bouches-du-Rhône region and one of the very last in France.
For over 100 years, while ten or so mills have closed in Ventabren and the villages near Coudoux, the skills of the first olive-oil masters have been maintained in these walls. Precise, traditional techniques are used to create this typical, high-quality oil, with an exceptional taste that is renewed each year.
The oils on offer are always natural products, made to exacting standards. Three oils, all traditionally made*, are brought to life at the mill:
- PDO Aix-en-Provence olive oil
- Tradition, the mill's flagship oil
- Fleur d'huile, our special vintage
*The olives are ground with a millstone and the oil extracted in olive presses. The must runs into the settling tank and the oil rises to the surface and is collected by hand.
